Pink Lake Butchers are delighted to have reached an agreement with Gold Award Winning Esperance Berkshire Pork from local farmers Josh & Emma Lay.

 

Esperance Berkshire Pork has been recognised as some of Australia’s finest pork, by winning, not just the Open Pork Category but also Champion Heritage Pork at Royal Agricultural Society of Western Australia 2019 Perth Royal Food Awards also receiving multitudes of positive remarks on the flavour and presentation of their product from the judging panel.

 

 

**Berkshire is the oldest registered pig breed, kept by the royal family at Windsor Castle for hundreds of years. The excellent carcass qualities made them a favourite breed for upper class farmers.  The pigs themselves are processed in small batches at an abattoir owned by Linton Batt’s  family in Corrigin to minimise stress and maximise meat quality.  Research shows that Berkshire pork is genetically predisposed to producing the finest quality pork due to its shorter muscle fibres and lots of marbling, which contributes to both the flavour and the tenderness.

Linton Batt is the owner of Black Label Berkshire where Josh and Emma bought some their first breeders.  The pedigree have consistently won champion ribbons at Royal Shows around Australia and even England**
